Crispy Sweet Potato Fries - The Vegan Eskimo

 


Sweet and cripsy, yet savoury and salty.


Serves 4 as a side


Ingredients


  • 1 kg of sweet potato (2.2 lbs)
  • 4 tablespoons extra virgin olive oil
  • 1 tablesppoon baking soda/sodium bicarbonate
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano

What you will need


  • Cutting board and knife
  • 1 big bowl
  • 1 small bowl
  • 1 spoon to measure
  • 2 Baking trays
  • Baking paper or silicone mats

 

Instructions


  1. Preheat the oven to 200 c (390 F) on convection.
  2. Wash the sweet potato so no dirt is visible on them, because you want to keep the skins, it gives that extra crisp.
  3. Cut into thin long fries and put into a big bowl with the oil, baking soda and spices and mix well.

  4. Place the fries on the two lined baking trays, evenly spaced apart, this will prevent them getting soggy.
  5. Put both trays in the oven on evenly spaced racks. Bake on 200 c (390 F) on convection 30 minutes, or until crisp.
