Vegan Sweet Onion Dressing - The Vegan Eskimo


Sweet onion dressing. Perfect in a sandwich, wrap, burger or as a dressing in a salad. The texture is slightly runny, so if you wish to make it thicker, you can add a slurry to thicken it.


Makes about 150 ml (5 oz)


Ingredients


  • 0.6 dl yellow onions (1/4 cup)
  • 2 tablespoons unsweetened plant milk
  • 2 tablespoons sunflower oil
  • 1 tablespoon water
  • 1½ tablespoons granulated sugar
  • 1 tablespoon agave syrup
  • ½ tablespoon balsamico
  • ½ tablespoon vinegar
  • 1/4 teaspoon mustard seeds
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • (Optional slurry to thicken: 1 teaspoon corn starch and 1 tablespoon water)

Instructions


  1. Chop the yellow onion and put in a pot with the oil, agave syrup, balsamico, vinegar and mustard seeds. Turn the heat on high and bring to a simmer.
  2. When brought to a simmer add in the water, plant milk, salt and pepper. Bring to a simmer. When the onions are soft turn off the heat.
  3. Blend with a stick blender until completely smooth.

  4. Optional step: If you like a thicker dressing, take the pot off the heat. In a separate bowl mix a slurry of 1 teaspoon corn starch and 1 tablespoon water. Mix well and add to the pot while whisking. Add the pot to the heat again and bring to a simmer for a few minutes, while continously whisking until it gets thicker.
  5. Store in a container of choice. Let cool down and store in the fridge for up to 5 days.
